What an incredible find! The Library of Congress is home to 10,000 documents belonging to Rosa Parks, and among them is a handwritten recipe for her "Featherlite" pancakes.
The recipe is written on the back of a bank envelope and includes peanut butter and three times the amount of baking soda used in most pancake recipes.
Will you try this recipe? I will absolutely make these one Sunday morning with Eleanor and be sure to discuss the great contributions of the late Rosa Parks, the impact she left on the world and her important role in the Civil Rights movement.
