A friend of mine told me she does boneless skinless chicken breasts in the crockpot with a jar of tomatillo salsa from Trader Joes and uses it for chicken tacos. Delicious, right? I thought it was this brilliant dinner hack I had heard of. I come to find out, this is how EVERYONE makes chicken tacos in the crockpot, but apparently folks also add black beans and corn. Yum! We top 'em with lettuce, sour cream, avocado, lime and a few dashes of hot sauce!
Also... this is what my lunch looks like when my husband packs. Pretty impressive, huh??
